Preparation & Tips
Prepare the Fish-Based Green Curry Sauce:
- In a blender or food processor, combine lemongrass, garlic, shallots, galangal or ginger, turmeric powder, kaffir lime leaves, shrimp paste, and a splash of coconut milk. Blend until you get a smooth paste.
- In a large pot, heat some vegetable oil over medium heat. Add the paste and cook for a few minutes until fragrant.
- Add the chopped fish fillets to the pot and cook until they start to break apart.
- Pour in the remaining coconut milk and water. Bring to a gentle simmer and let it cook for about 20-30 minutes, stirring occasionally.
- Season the sauce with salt and sugar to taste. Adjust the consistency by adding more water if needed.
Prepare the Noodles and Vegetables:
- Cook the rice noodles according to the package instructions. Drain and set aside.
- Prepare the fresh vegetables and herbs by washing and chopping them as desired.
Assemble the Num Banh Chok:
- Place a portion of cooked rice noodles in a bowl.
- Ladle the fish-based green curry sauce over the noodles.
- Arrange the fresh vegetables and herbs on top of the sauce.
- Serve with lime wedges and red chili slices on the side.
